Instructions
- In a large mixing bowl, combine the almond flour, all-purpose flour, powdered sugar, and salt. Whisk until well blended.
- In another bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the egg, vanilla extract, and almond extract to the butter mixture, mixing until smooth and creamy.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Portion out about 1 tablespoon of dough for each cookie, rolling them into balls and placing them on the prepared baking sheet, leaving 2 inches of space between each.
- Create a small indentation in the center of each cookie using your thumb or the back of a spoon.
- Fill each indentation with about 1/2 teaspoon of apricot jam.
- Sprinkle sliced almonds on top of each cookie, pressing them gently into the dough.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
