Instructions

  1. In a large mixing bowl, combine the almond flour, all-purpose flour, powdered sugar, and salt. Whisk until well blended.
  2. In another bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  3. Add the egg, vanilla extract, and almond extract to the butter mixture, mixing until smooth and creamy.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Portion out about 1 tablespoon of dough for each cookie, rolling them into balls and placing them on the prepared baking sheet, leaving 2 inches of space between each.
  8. Create a small indentation in the center of each cookie using your thumb or the back of a spoon.
  9. Fill each indentation with about 1/2 teaspoon of apricot jam.
