- 1 large egg
- 1 cup (about 4 ounces) finely chopped peeled apple

- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg yolk
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
- Beat in the egg and vanilla extract.
- Dissolve baking soda in hot water; add to batter along with salt.
- Stir in flour, oats, cinnamon, and nutmeg.
- Drop by rounded tablespoons onto ungreased cookie sheets.
- Bake 10 to 12 minutes, or until edges are nicely browned.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- For the cheesecake filling: In a medium bowl, beat cream cheese, sugar, and vanilla until smooth.
- Spread onto cooled cookies.
- Top with apple pie filling.
