Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1 cup coleslaw (store-bought or homemade)
  • Pickles (optional, for topping)
  • Fresh cilantro or parsley (for garnish, optional)
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar

Instructions

  1. Preheat the Grill or Oven: If using a grill, preheat to medium-high heat. If using an oven, preheat to 375°F (190°C).
  2. Prepare the Chicken: Rinse chicken breasts under cold water and pat dry with paper towels.
  3. Season the Chicken: In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub olive oil over chicken breasts, then sprinkle seasoning mixture evenly on both sides.
  4. Grill or Bake the Chicken:
    • Grilling: Cook chicken on the grill for about 6-7 minutes on each side, or until internal temperature reaches 165°F (75°C).
    • Baking: Place seasoned chicken on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until fully cooked.
  5. Add BBQ Sauce: Brush BBQ sauce over each breast. If grilling, close the lid and cook for an additional 2-3 minutes. If baking, return chicken to the oven for 5 minutes.
  6. Rest the Chicken: Remove chicken from grill or oven and let rest for about 5 minutes.
  7. Gather Ingredients for Coleslaw: If making homemade coleslaw, gather shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper.
  8. Mix the Coleslaw: In a large bowl, combine cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth. Pour dressing over cabbage and carrots, and toss until well coated. Set aside.
  9. Prepare the Buns: Slice hamburger buns in half. Optionally, toast them lightly on the grill or in a toaster.
  10. Slice the Chicken: After resting, slice each breast into strips or shred with two forks.
  11. Build the Sandwich:
    • Start with the bottom half of the bun.
    • Add a generous portion of sliced or shredded BBQ chicken.
    • Top with a scoop of coleslaw.
    • Optionally, add pickles for extra crunch.
    • Place the top half of the bun on the sandwich.
  12. Garnish (Optional): Sprinkle chopped cilantro or parsley on top before serving.
  13. Plate the Sandwiches: Arrange sandwiches on a serving platter with extra BBQ sauce on the side for dipping.
  14. Add Sides: Serve with potato chips, sweet potato fries, or a fresh garden salad.
  15. Enjoy: Gather friends or family and enjoy these delicious BBQ chicken sandwiches!
  16. Leftovers: Store any leftover chicken or coleslaw separately in airtight containers in the refrigerator.
