- 1 teaspoon vanilla extract
- 1 package (17.3 oz) frozen puff pastry, thawed
- 1 cup fresh blueberries (or frozen, thawed and drained)
- 1 egg, beaten (for egg wash)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- Powdered sugar (for dusting)
Instructions
- In a medium mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Using a hand mixer or a whisk, beat the mixture until its smooth and creamy (about 2-3 minutes). Set aside.
- In a small saucepan over medium heat, combine the fresh blueberries, lemon juice, and cornstarch. Stir gently to combine. Cook for about 5-7 minutes, or until the blueberries start to burst and the mixture thickens slightly. Remove from heat and let cool.
- Preheat your oven to 400°F (200°C). On a lightly floured surface, unfold the thawed puff pastry sheets and roll each sheet out gently. Cut each sheet into four equal squares (total of eight squares). Make a small cut about 1 inch from the edge on each side of the squares to create a border.
- Place about 1 tablespoon of the cream cheese filling in the center of each pastry square. Spoon about 1 tablespoon of the blueberry filling on top. Fold the corners of the pastry square towards the center, overlapping slightly, and press down to seal.
- Brush the tops of each pastry with the beaten egg. Optionally, sprinkle a little granulated sugar on top.
- Line a baking sheet with parchment paper and place the assembled pastries on it, leaving space between each. Bake for 15-20 minutes, or until puffed and golden brown. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Dust with powdered sugar before serving. Enjoy warm or at room temperature!
