- 1 cup fresh broccoli florets, chopped
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup cream cheese, softened
- 1/4 cup onion, finely chopped
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 package (1 lb) refrigerated pie crusts (or homemade if you prefer)
- 1 egg, beaten (for egg wash)
Instructions
- In a medium skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes until they become translucent.
- Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to prevent burning.
- Toss in the chopped broccoli florets and sauté for about 5-7 minutes until they are tender but still bright green.
- Remove the skillet from heat and let it cool for a few minutes.
- In a large mixing bowl, combine the sautéed broccoli mixture with the softened cream cheese, shredded cheddar cheese, salt, black pepper, and red pepper flakes (if using). Mix until well combined.
- Preheat your oven to 400°F (200°C).
- Roll out the refrigerated pie crusts on a lightly floured surface. If using homemade dough, roll it out to about 1/8-inch thickness.
- Using a round cutter (about 4-5 inches in diameter), cut out circles from the dough, yielding about 8-10 circles.
- Take one dough circle and place about 2 tablespoons of the broccoli and cheese filling in the center.
- Fold the dough over to create a half-moon shape and press the edges together to seal. Use fingers or a fork to crimp the edges.
- Repeat with the remaining dough circles and filling.
- In a small bowl, beat the egg until well mixed.
- Brush the tops of each hand pie with the beaten egg using a pastry brush.
- Optionally, sprinkle extra cheese or sesame seeds on top.
- Line a baking sheet with parchment paper and place the assembled hand pies on it, leaving space between each.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and flaky.
Notes
- Feel free to customize the filling by adding other vegetables or proteins.
- These hand pies can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
