  • Salt and pepper to taste
  • 1 cup buffalo sauce (store-bought or homemade)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 1/4 cup chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry with paper towels.
  3. In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Rub olive oil over the chicken breasts and coat them with the seasoning mix.
  5. Place the seasoned chicken on a parchment-lined baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 5 minutes before slicing into bite-sized pieces.
  7. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente (about 8-10 minutes).
  8. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.
  9. In a large skillet over medium heat, combine buffalo sauce and heavy cream. Stir to combine.
  10. Simmer the sauce for about 5 minutes, stirring occasionally until it thickens slightly.
  11. Add shredded cheddar cheese to the skillet and stir until melted and smooth. Adjust the consistency with reserved pasta water if needed.
  12. Add the cooked penne pasta to the skillet and toss to coat in the sauce.
  13. Fold in the sliced chicken until evenly distributed.
  14. If using, sprinkle blue cheese over the top and gently mix in.
  15. Taste and adjust seasoning if necessary.
  16. Serve hot, garnished with chopped green onions and extra shredded cheese if desired.
