- 1 pound of boneless, skinless chicken breasts

- 1 cup buffalo sauce (store-bought or homemade)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled blue cheese (optional)
- 1/4 cup chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry with paper towels.
- In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper.
- Rub olive oil over the chicken breasts and coat them with the seasoning mix.
- Place the seasoned chicken on a parchment-lined baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before slicing into bite-sized pieces.
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente (about 8-10 minutes).
- Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.
- In a large skillet over medium heat, combine buffalo sauce and heavy cream. Stir to combine.
- Simmer the sauce for about 5 minutes, stirring occasionally until it thickens slightly.
- Add shredded cheddar cheese to the skillet and stir until melted and smooth. Adjust the consistency with reserved pasta water if needed.
- Add the cooked penne pasta to the skillet and toss to coat in the sauce.
- Fold in the sliced chicken until evenly distributed.
- If using, sprinkle blue cheese over the top and gently mix in.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with chopped green onions and extra shredded cheese if desired.
