- 1 cup uncooked long-grain rice
- 2 cups chicken broth
- 1 cup frozen corn
- 1 cup shredded cheddar cheese

Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with Cajun seasoning, coating evenly on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest before chopping into bite-sized pieces.
- In the same skillet, add diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
- In a large mixing bowl, combine chopped chicken, sautéed vegetables, undrained diced tomatoes, uncooked rice, chicken broth, frozen corn, and heavy cream. Stir until well combined. Season with salt and pepper to taste.
- Grease a 9×13 inch baking dish with olive oil or cooking spray. Pour the chicken and rice mixture into the dish, spreading evenly.
- Sprinkle shredded cheddar cheese over the top.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and continue baking for an additional 15-20 minutes until cheese is bubbly and golden brown, and rice is tender.
- Let the casserole sit for 5-10 minutes before serving. Garnish with freshly chopped parsley.
