- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the baby potatoes under cold water to remove any dirt and cut them in half.
- Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
- In a large mixing bowl, combine the olive oil, ranch seasoning mix, garlic powder, onion powder, black pepper, and salt. Stir until well combined.
- Add the halved potatoes to the bowl and toss until they are evenly coated with the oil and seasoning.
- Transfer the seasoned potatoes to the prepared baking sheet and spread them out in a single layer.
- Roast the potatoes in the preheated oven for about 25-30 minutes, stirring halfway through.
- Check the potatoes for doneness; they should be golden brown and fork-tender. If needed, continue roasting for an additional 5-10 minutes.
- Remove the potatoes from the oven and sprinkle the shredded cheddar cheese and grated Parmesan cheese over the hot potatoes.
- Return the baking sheet to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove the potatoes from the oven and sprinkle the chopped fresh parsley over the top.
- Transfer the cheesy ranch oven-roasted potatoes to a serving dish and serve hot.
