Description

These Cheesy Ranch Oven-Roasted Potatoes are a delicious side dish featuring tender baby potatoes tossed in ranch seasoning, topped with melted cheddar and Parmesan cheese. Crispy on the outside and bursting with flavor, they are a perfect complement to any meal!

Ingredients

Scale
  • 2 pounds baby potatoes (or small red potatoes), halved
  • 1/4 cup olive oil
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the baby potatoes under cold water to remove any dirt and cut them in half.
  3. Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
  4. In a large mixing bowl, combine the olive oil, ranch seasoning mix, garlic powder, onion powder, black pepper, and salt. Stir until well combined.
  5. Add the halved potatoes to the bowl and toss until they are evenly coated with the oil and seasoning.
  6. Transfer the seasoned potatoes to the prepared baking sheet and spread them out in a single layer.
  7. Roast the potatoes in the preheated oven for about 25-30 minutes, stirring halfway through.
  8. Check the potatoes for doneness; they should be golden brown and fork-tender. If needed, continue roasting for an additional 5-10 minutes.
  9. Remove the potatoes from the oven and sprinkle the shredded cheddar cheese and grated Parmesan cheese over the hot potatoes.
  10. Return the baking sheet to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  11. Remove the potatoes from the oven and sprinkle the chopped fresh parsley over the top.
  12. Transfer the cheesy ranch oven-roasted potatoes to a serving dish and serve hot.

Notes

  • Choosing Potatoes: Baby potatoes are great for this recipe because they cook quickly and have a creamy texture. However, you can use any small potatoes you have on hand.
  • Adjusting Seasoning: Feel free to adjust the amount of ranch seasoning based on your taste preference.
  • Cheese Variations: Experiment with other cheeses like mozzarella or pepper jack for a different flavor profile.
  • Make it Spicy: Add crushed red pepper flakes or diced jalapeños to the seasoning mix for a kick.
  • Storing Leftovers: Let the potatoes cool completely before storing them in an airtight container in the refrigerator for up to 3 days.
