  • 4 cups water (divided into 3 cups and 1 cup)
  • 1/4 cup chia seeds
  • Ice cubes (for serving)
  • Fresh mint leaves (for garnish, optional)
  • Additional lemon slices (for garnish, optional)

Instructions

  1. In a medium saucepan, combine the fresh raspberries and 1 cup of water. If using frozen raspberries, no need to thaw.
  2. Heat over medium heat, stirring occasionally, until it reaches a gentle simmer (about 5-7 minutes).
  3. Once softened, remove from heat and strain the mixture through a fine mesh strainer into a bowl or pitcher to remove seeds. Press down with a spoon to extract juice.
  4. Set the raspberry puree aside to cool.
  5. In a large pitcher, combine the lemon juice and honey (or agave syrup). Stir until honey is fully dissolved.
  6. Add the remaining 3 cups of water and stir to combine. Adjust sweetness if needed.
  7. Pour the cooled raspberry puree into the lemonade base and stir until well mixed.
  8. In a small bowl, combine chia seeds with 1 cup of water. Stir well to distribute seeds.
  9. Let sit for 10-15 minutes until seeds absorb water and form a gel-like consistency.
  10. Stir the gelled chia seeds to break up clumps before adding to the lemonade.
  11. Pour the gelled chia seeds into the pitcher with the raspberry lemonade. Stir gently to combine.
  12. Cover and refrigerate for at least 30 minutes to meld flavors and allow chia seeds to expand.
  13. Fill glasses with ice cubes.
  14. Pour the Chia Raspberry Lemonade over the ice, filling each glass about three-quarters full.
  15. Garnish with lemon slices and fresh mint if desired.
  16. Stir gently before serving to ensure chia seeds are evenly distributed.
