- 2 large chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 ripe avocado
- 1 cup cooked rice (white or brown)
- 1 cup black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup salsa
- 4 large flour tortillas
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry with paper towels.
- In a small bowl, mix together olive oil, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper.
- Rub the seasoning mix all over the chicken breasts.
- Place the seasoned chicken on a baking sheet lined with parchment paper or aluminum foil.
- Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the oven and let it rest for 5 minutes.
- While the chicken is resting, cook your rice if not already done.
- In a medium bowl, mash the avocado with a fork, adding a pinch of salt and a squeeze of lime juice.
- In another bowl, combine the cooked rice, black beans, corn, and salsa. Mix well.
- Shred the rested chicken using two forks or chop it with a knife.
- Add the shredded chicken to the rice, bean, and corn mixture, stirring gently to combine.
- Lay a large flour tortilla flat on a clean surface.
- Spoon a generous amount of the chicken and rice mixture onto the center of the tortilla.
- Add a dollop of mashed avocado and a sprinkle of shredded cheese on top.
- Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly away from you.
- Repeat for the remaining tortillas and filling.
- In a large skillet, heat a little olive oil over medium heat.
- Place the assembled burritos seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown.
