  • 2 large chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 ripe avocado
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup salsa
  • 4 large flour tortillas
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry with paper towels.
  3. In a small bowl, mix together olive oil, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper.
  4. Rub the seasoning mix all over the chicken breasts.
  5. Place the seasoned chicken on a baking sheet lined with parchment paper or aluminum foil.
  6. Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the oven and let it rest for 5 minutes.
  8. While the chicken is resting, cook your rice if not already done.
  9. In a medium bowl, mash the avocado with a fork, adding a pinch of salt and a squeeze of lime juice.
  10. In another bowl, combine the cooked rice, black beans, corn, and salsa. Mix well.
  11. Shred the rested chicken using two forks or chop it with a knife.
  12. Add the shredded chicken to the rice, bean, and corn mixture, stirring gently to combine.
  13. Lay a large flour tortilla flat on a clean surface.
  14. Spoon a generous amount of the chicken and rice mixture onto the center of the tortilla.
  15. Add a dollop of mashed avocado and a sprinkle of shredded cheese on top.
  16. Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly away from you.
  17. Repeat for the remaining tortillas and filling.
  18. In a large skillet, heat a little olive oil over medium heat.
  19. Place the assembled burritos seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown.
