- 2 cups cooked chicken, shredded or diced
- 1 cup romaine lettuce, chopped
- 1/2 cup Caesar dressing
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 4 large croissants
- Optional: cherry tomatoes, halved, for garnish
- Optional: extra Parmesan cheese for topping
Instructions
- In a large mixing bowl, combine the shredded or diced chicken with the chopped romaine lettuce.
- Drizzle in the Caesar dressing, starting with about half a cup and adding more to taste.
- Sprinkle in the grated Parmesan cheese, black pepper, and garlic powder.
- Gently toss everything together until evenly mixed, being careful not to overmix to keep the lettuce crisp.
- Preheat your oven to 350°F (175°C).
- Slice the croissants in half lengthwise, ensuring not to cut all the way through.
- If toasting, place the croissant halves on a baking sheet, cut side up, and sprinkle with extra Parmesan cheese if desired.
- Toast in the oven for about 5-7 minutes, or until golden and slightly crispy.
- Remove the toasted croissants from the oven and let them cool for a minute.
- Place a generous scoop of the chicken salad on the bottom half of each croissant.
- If using, add cherry tomato halves on top of the chicken salad.
- Close the croissant with the top half and gently press down to secure the filling.
