  • 1 cup romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 large croissants
  • Optional: cherry tomatoes, halved, for garnish
  • Optional: extra Parmesan cheese for topping

Instructions

  1. In a large mixing bowl, combine the shredded or diced chicken with the chopped romaine lettuce.
  2. Drizzle in the Caesar dressing, starting with about half a cup and adding more to taste.
  3. Sprinkle in the grated Parmesan cheese, black pepper, and garlic powder.
  4. Gently toss everything together until evenly mixed, being careful not to overmix to keep the lettuce crisp.
  5. Preheat your oven to 350°F (175°C).
  6. Slice the croissants in half lengthwise, ensuring not to cut all the way through.
  7. If toasting, place the croissant halves on a baking sheet, cut side up, and sprinkle with extra Parmesan cheese if desired.
  8. Toast in the oven for about 5-7 minutes, or until golden and slightly crispy.
  9. Remove the toasted croissants from the oven and let them cool for a minute.
  10. Place a generous scoop of the chicken salad on the bottom half of each croissant.
  11. If using, add cherry tomato halves on top of the chicken salad.
  12. Close the croissant with the top half and gently press down to secure the filling.
