Ingredients
Scale
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced (cremini or button mushrooms preferred)
- 1 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- 1 cup chicken broth
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Cooked egg noodles or rice (for serving)
Instructions
- Start by gathering all your ingredients. This makes the cooking process smoother and more enjoyable.
- In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken pieces. Season them with salt and pepper.
- Cook the chicken for about 5-7 minutes, stirring occasionally, until its browned and cooked through. Remove the chicken from the skillet and set it aside on a plate.
- In the same skillet, add the chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
- Next, add the minced garlic and sliced mushrooms. Cook for another 5-6 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.
- Sprinkle the paprika over the mushroom mixture and stir well to combine.
- Sprinkle the flour over the mushroom mixture and stir to coat the vegetables evenly.
- Slowly pour in the chicken broth while stirring continuously to prevent lumps. Bring the mixture to a gentle simmer.
- Once the sauce starts to thicken, add the Worcestershire sauce and stir well.
- Reduce the heat to low and stir in the sour cream until the sauce is creamy and smooth.
- Return the cooked chicken to the skillet, stirring to coat it in the creamy sauce. Let it simmer for an additional 5 minutes to heat through.
- Taste the sauce and adjust the seasoning with more salt and pepper if needed.
- While the chicken stroganoff is simmering, prepare your egg noodles or rice according to the package instructions.
- Once ready, drain them and place them on serving plates.
- Spoon the chicken stroganoff over the noodles or rice, ensuring plenty of sauce on top.
- Garnish with freshly chopped parsley.
Notes
- For a richer flavor, add a splash of white wine to the sauce after adding the chicken broth.
- Consider adding peas or spinach right before serving for extra color and nutrients.
- Substitute chicken with beef or mushrooms for a vegetarian version, adjusting cooking times as needed.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently.
