Description

This creamy Chicken Stroganoff features tender chicken simmered in a rich sauce with mushrooms and sour cream, served over egg noodles or rice. It’s a comforting, flavorful dish that’s easy to prepare and perfect for family meals.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced (cremini or button mushrooms preferred)
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or rice (for serving)

Instructions

  1. Start by gathering all your ingredients. This makes the cooking process smoother and more enjoyable.
  2. In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken pieces. Season them with salt and pepper.
  3. Cook the chicken for about 5-7 minutes, stirring occasionally, until it’s browned and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  4. In the same skillet, add the chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
  5. Next, add the minced garlic and sliced mushrooms. Cook for another 5-6 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.
  6. Sprinkle the paprika over the mushroom mixture and stir well to combine.
  7. Sprinkle the flour over the mushroom mixture and stir to coat the vegetables evenly.
  8. Slowly pour in the chicken broth while stirring continuously to prevent lumps. Bring the mixture to a gentle simmer.
  9. Once the sauce starts to thicken, add the Worcestershire sauce and stir well.
  10. Reduce the heat to low and stir in the sour cream until the sauce is creamy and smooth.
  11. Return the cooked chicken to the skillet, stirring to coat it in the creamy sauce. Let it simmer for an additional 5 minutes to heat through.
  12. Taste the sauce and adjust the seasoning with more salt and pepper if needed.
  13. While the chicken stroganoff is simmering, prepare your egg noodles or rice according to the package instructions.
  14. Once ready, drain them and place them on serving plates.
  15. Spoon the chicken stroganoff over the noodles or rice, ensuring plenty of sauce on top.
  16. Garnish with freshly chopped parsley.

Notes

  • For a richer flavor, add a splash of white wine to the sauce after adding the chicken broth.
  • Consider adding peas or spinach right before serving for extra color and nutrients.
  • Substitute chicken with beef or mushrooms for a vegetarian version, adjusting cooking times as needed.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently.
