  • 250g spaghetti
  • 4 cloves garlic, minced
  • 2 red chillies, finely chopped
  • 3 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Juice of 1 lemon
  • 50g grated Parmesan cheese (optional, for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the Tenderstem broccoli: Rinse under cold water and pat dry.
  2. Prepare the garlic and chillies: Mince the garlic and finely chop the chillies, removing seeds for a milder flavor if desired.
  3. Boil water for spaghetti: Fill a large pot with water, add salt, and bring to a boil.
  4. Cook the spaghetti: Add spaghetti to boiling water and cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
  5. Add the Tenderstem broccoli: In the last 2-3 minutes of cooking, add the Tenderstem broccoli to the pot.
  6. Reserve pasta water: Before draining, reserve about 1 cup of the pasta cooking water.
  7. Drain the spaghetti and broccoli: Drain in a colander and set aside.
  8. Heat the olive oil: In a large skillet, heat olive oil over medium heat.
  9. Sauté the garlic and chillies: Add minced garlic and chopped chillies to the pan, sauté for 1-2 minutes until fragrant and lightly golden.
  10. Add the cooked spaghetti and broccoli: Toss the drained spaghetti and broccoli in the skillet with the garlic and chilli oil.
  11. Incorporate reserved pasta water: Gradually add reserved pasta water while tossing until you reach desired sauce consistency.
  12. Season the dish: Season with salt and freshly ground black pepper to taste.
  13. Add lemon juice: Squeeze the juice of one lemon over the pasta and toss to combine.
  14. Serve the spaghetti: Divide among serving plates and sprinkle with grated Parmesan cheese if desired.
  15. Garnish: Top with freshly chopped parsley.
