  • 1/2 cup fresh strawberries, hulled and sliced

Instructions

  1. In a medium-sized mixing bowl, combine the almond milk, chia seeds, cocoa powder, maple syrup, and vanilla extract. Whisk until well mixed and free of lumps.
  2. Let the mixture sit for about 5 minutes to allow the chia seeds to absorb the liquid and expand.
  3. Stir the mixture again to break up any clumps of chia seeds that may have formed.
  4. Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 2 hours, preferably overnight.
  5. Rinse the strawberries under cold water and pat them dry.
  6. Hull the strawberries by removing the green tops.
  7. Slice the strawberries into thin rounds or quarters.
  8. Once the chia pudding has thickened, stir it to smooth out the texture.
  9. In serving glasses or bowls, add a layer of chocolate chia pudding at the bottom.
  10. Add a layer of sliced strawberries on top, arranging them decoratively.
  11. Repeat the layers until the glasses are full, finishing with a layer of strawberries. Optionally, sprinkle dark chocolate chips on top.
  12. Garnish with fresh mint leaves for a pop of color and flavor.
