- 1/2 cup fresh strawberries, hulled and sliced
- 1/4 cup dark chocolate chips (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium-sized mixing bowl, combine the almond milk, chia seeds, cocoa powder, maple syrup, and vanilla extract. Whisk until well mixed and free of lumps.
- Let the mixture sit for about 5 minutes to allow the chia seeds to absorb the liquid and expand.
- Stir the mixture again to break up any clumps of chia seeds that may have formed.
- Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 2 hours, preferably overnight.
- Rinse the strawberries under cold water and pat them dry.
- Hull the strawberries by removing the green tops.
- Slice the strawberries into thin rounds or quarters.
- Once the chia pudding has thickened, stir it to smooth out the texture.
- In serving glasses or bowls, add a layer of chocolate chia pudding at the bottom.
- Add a layer of sliced strawberries on top, arranging them decoratively.
- Repeat the layers until the glasses are full, finishing with a layer of strawberries. Optionally, sprinkle dark chocolate chips on top.
- Garnish with fresh mint leaves for a pop of color and flavor.
