Instructions
- Preheat oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together the milk, oil, and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fill the muffin cups about 2/3 full.
- In a small bowl, combine the sugar and cinnamon for the topping. Sprinkle over the muffins.
- Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
