  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • ½ cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar
  • 1 cup marshmallow fluff
  • 1 teaspoon vanilla extract (for filling)
  • Additional powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  4. Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.
  5. Alternate adding the dry ingredients and the milk, starting with half of the dry mixture, mixing on low speed until just combined. Then add half of the milk and mix again. Repeat with the remaining dry ingredients and milk.
  6. Drop rounded tablespoons of batter onto the prepared baking sheets, leaving about 2 inches of space between each mound.
  7. Bake for 10-12 minutes, or until the cakes spring back when lightly pressed. They should look set and slightly glossy on top.
  8. Let the cakes cool on the baking sheets for about 5 minutes, then transfer them to a wire rack to cool completely.
  9. In a medium bowl, beat the softened butter with an electric mixer until creamy.
  10. Gradually add the powdered sugar, mixing on low speed until combined.
  11. Add the marshmallow fluff and vanilla extract, beating on medium speed until smooth and fluffy, about 2-3 minutes.
  12. Once the chocolate cakes are completely cool, take one cake and place it flat side up.
  13. Spread a generous amount of marshmallow filling on the flat side of the cake (about 1-2 tablespoons).
  14. Place another cake flat side down on top of the filling, creating a sandwich. Gently press down to spread the filling to the edges.
  15. Repeat with the remaining cakes and filling until all whoopie pies are assembled.
  16. Dust the tops with additional powdered sugar if desired.
