- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon instant coffee granules
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup chocolate chips (optional)
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
- Dissolve the instant coffee granules in a tablespoon of hot water, then add this coffee mixture to the wet ingredients and mix until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- In a separate bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (about 2 minutes).
- Add the powdered sugar to the cream cheese and mix until well combined.
- If desired, fold in the chocolate chips or chopped nuts into the cream cheese mixture.
- Line your baking sheets with parchment paper.
- Using a cookie scoop or tablespoon, drop a heaping spoonful of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Take a small amount of the cream cheese filling (about a teaspoon) and place it in the center of each cookie dough mound. Flatten another spoonful of cookie dough and place it on top of the cream cheese filling, sealing it in.
- Gently press down to ensure the filling is enclosed and flatten the tops slightly.
- Place the baking sheets in the preheated oven and bake for about 12-15 minutes, or until the edges are lightly golden.
- Remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
- Once the cookies are completely cool, store them in an airtight container at room temperature. They can last for up to a week.
