  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee granules
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup chocolate chips (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  4. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
  5. Dissolve the instant coffee granules in a tablespoon of hot water, then add this coffee mixture to the wet ingredients and mix until fully incorporated.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  7. In a separate bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (about 2 minutes).
  8. Add the powdered sugar to the cream cheese and mix until well combined.
  9. If desired, fold in the chocolate chips or chopped nuts into the cream cheese mixture.
  10. Line your baking sheets with parchment paper.
  11. Using a cookie scoop or tablespoon, drop a heaping spoonful of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
  12. Take a small amount of the cream cheese filling (about a teaspoon) and place it in the center of each cookie dough mound. Flatten another spoonful of cookie dough and place it on top of the cream cheese filling, sealing it in.
  13. Gently press down to ensure the filling is enclosed and flatten the tops slightly.
  14. Place the baking sheets in the preheated oven and bake for about 12-15 minutes, or until the edges are lightly golden.
  15. Remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
  16. Once the cookies are completely cool, store them in an airtight container at room temperature. They can last for up to a week.
