Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside, drizzling with olive oil to prevent sticking.
  2. In a large skillet, heat olive oil over medium heat. Sauté the diced onion for 3-4 minutes until translucent. Add minced garlic and cook for another 1-2 minutes. Stir in diced carrots and cook for 5 minutes. Add cooked chicken, frozen peas, dried thyme, dried rosemary, salt, and black pepper. Cook for another 3-4 minutes.
  3. Sprinkle flour over the mixture, stirring to coat. Gradually pour in chicken broth while stirring to avoid lumps. Bring to a gentle simmer for about 5 minutes until thickened. Reduce heat to low, stir in heavy cream, and simmer for 2-3 minutes. Add shredded cheddar cheese, stirring until melted and incorporated. Adjust seasoning if necessary.
  4. Add the cooked pasta to the skillet and toss gently until well coated. If too thick, add a splash of chicken broth or cream to reach desired consistency.
