- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Take the chicken breasts out of the refrigerator and let them sit at room temperature for about 15-20 minutes. Season both sides generously with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on one side without moving them.
- Flip the chicken breasts and cook for an additional 6-7 minutes, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and cover with aluminum foil to keep warm.
- In the same skillet, reduce the heat to medium and add 4 tablespoons of unsalted butter. Let it melt and bubble, scraping up any brown bits from the chicken.
- Add the minced garlic to the melted butter and sauté for 1-2 minutes until fragrant and slightly golden.
- Pour in 1 cup of chicken broth, stirring to combine. Bring to a simmer and cook for about 3-4 minutes to reduce slightly.
- Add 1 cup of heavy cream to the skillet and stir well to combine.
- Season the sauce with 1 teaspoon of Italian seasoning and 1 teaspoon of paprika. Stir to incorporate.
- Allow the sauce to simmer for another 5-7 minutes, stirring occasionally until it thickens. If too thick, add a splash of chicken broth.
- Stir in 1/2 cup of grated Parmesan cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper if needed.
- Add the chicken back into the skillet, spooning sauce over the top. Simmer for 2-3 minutes to soak up flavors.
- Remove from heat and sprinkle with freshly chopped parsley before serving.
- Serve each chicken breast with a generous spoonful of creamy garlic butter sauce. Garnish with additional Parmesan cheese and parsley if desired.
