- 1 pound lobster meat, cooked and chopped
- 1 cup orzo pasta
- 4 cups chicken or seafood broth
- 1 cup heavy cream
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach, roughly chopped
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, bring the chicken or seafood broth to a boil over medium-high heat.
- Once boiling, add the orzo pasta and stir gently. Cook according to package instructions (about 8-10 minutes) until al dente.
- Drain the orzo, reserving about 1/2 cup of the broth for later use.
- In the same pot, heat the olive oil and butter over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1-2 minutes.
- Add the halved cherry tomatoes and dried thyme, cooking for about 5 minutes until softened.
- Pour in the heavy cream and stir well. Let it simmer for 3-4 minutes to thicken.
- Add the reserved broth from the orzo and stir until combined.
- Toss in the chopped spinach and cook for 2-3 minutes until wilted.
- Gently fold in the chopped lobster meat, ensuring even distribution.
- Sprinkle in the grated Parmesan cheese and stir until melted.
- Season with salt and pepper to taste.
- Add the cooked orzo back into the pot and stir until well coated. Heat for an additional 2-3 minutes.
- Spoon the creamy lobster orzo into bowls or onto plates.
- Garnish with freshly chopped parsley and additional Parmesan cheese if desired.
- Serve with a glass of white wine or a refreshing salad on the side.
