  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, bring the chicken or seafood broth to a boil over medium-high heat.
  2. Once boiling, add the orzo pasta and stir gently. Cook according to package instructions (about 8-10 minutes) until al dente.
  3. Drain the orzo, reserving about 1/2 cup of the broth for later use.
  4. In the same pot, heat the olive oil and butter over medium heat.
  5. Add the chopped onion and sauté for 3-4 minutes until translucent.
  6. Stir in the minced garlic and cook for an additional 1-2 minutes.
  7. Add the halved cherry tomatoes and dried thyme, cooking for about 5 minutes until softened.
  8. Pour in the heavy cream and stir well. Let it simmer for 3-4 minutes to thicken.
  9. Add the reserved broth from the orzo and stir until combined.
  10. Toss in the chopped spinach and cook for 2-3 minutes until wilted.
  11. Gently fold in the chopped lobster meat, ensuring even distribution.
  12. Sprinkle in the grated Parmesan cheese and stir until melted.
  13. Season with salt and pepper to taste.
  14. Add the cooked orzo back into the pot and stir until well coated. Heat for an additional 2-3 minutes.
  15. Spoon the creamy lobster orzo into bowls or onto plates.
  16. Garnish with freshly chopped parsley and additional Parmesan cheese if desired.
  17. Serve with a glass of white wine or a refreshing salad on the side.
