- 1 head of garlic
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup grated Parmesan cheese

- Optional: Red pepper flakes for a bit of heat
Instructions
- Preheat your oven to 400°F (200°C).
- Slice off the top of the head of garlic to expose the individual cloves.
- Drizzle about 1 tablespoon of olive oil over the exposed garlic.
- Wrap the garlic head in aluminum foil to create a tight packet.
- Roast in the preheated oven for 30-35 minutes until the cloves are soft and golden brown.
- Let cool slightly, then squeeze the roasted garlic cloves into a small bowl.
- Bring a large pot of salted water to a boil.
- Add the cheese tortellini and cook according to package instructions (3-5 minutes) until they float to the top.
- Reserve about ½ cup of the pasta water, then drain the tortellini.
- In a large skillet over medium heat, add the remaining tablespoon of olive oil.
- Add the roasted garlic to the skillet and sauté for 1-2 minutes.
- Pour in the heavy cream and bring to a gentle simmer for 3-5 minutes.
- Gradually add the grated Parmesan cheese, stirring until melted and creamy. Adjust consistency with reserved pasta water if needed.
- Season with Italian seasoning, salt, pepper, and optional red pepper flakes.
- Add the drained tortellini to the skillet and gently toss to coat.
- If the sauce is too thick, add more reserved pasta water until desired creaminess is reached.
- Cook for an additional 2-3 minutes to meld flavors.
- Remove from heat and serve in bowls.
- Garnish with freshly chopped parsley and additional Parmesan cheese if desired.
- Enjoy warm, paired with a side salad or crusty bread.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
