  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: Red pepper flakes for a bit of heat

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice off the top of the head of garlic to expose the individual cloves.
  3. Drizzle about 1 tablespoon of olive oil over the exposed garlic.
  4. Wrap the garlic head in aluminum foil to create a tight packet.
  5. Roast in the preheated oven for 30-35 minutes until the cloves are soft and golden brown.
  6. Let cool slightly, then squeeze the roasted garlic cloves into a small bowl.
  7. Bring a large pot of salted water to a boil.
  8. Add the cheese tortellini and cook according to package instructions (3-5 minutes) until they float to the top.
  9. Reserve about ½ cup of the pasta water, then drain the tortellini.
  10. In a large skillet over medium heat, add the remaining tablespoon of olive oil.
  11. Add the roasted garlic to the skillet and sauté for 1-2 minutes.
  12. Pour in the heavy cream and bring to a gentle simmer for 3-5 minutes.
  13. Gradually add the grated Parmesan cheese, stirring until melted and creamy. Adjust consistency with reserved pasta water if needed.
  14. Season with Italian seasoning, salt, pepper, and optional red pepper flakes.
  15. Add the drained tortellini to the skillet and gently toss to coat.
  16. If the sauce is too thick, add more reserved pasta water until desired creaminess is reached.
  17. Cook for an additional 2-3 minutes to meld flavors.
  18. Remove from heat and serve in bowls.
  19. Garnish with freshly chopped parsley and additional Parmesan cheese if desired.
  20. Enjoy warm, paired with a side salad or crusty bread.
  21. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  22. Reheat in a skillet over medium heat, adding a splash of cream or reserved pasta water to loosen the sauce.
