- ½ cup powdered sugar
- 1 tablespoon lemon juice
- 1 cup fresh strawberries, sliced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until the crumbs are well coated and resemble wet sand.
- Line a 9×9 inch baking dish with parchment paper, leaving overhang for easy removal.
- Press the graham cracker mixture firmly into the bottom of the prepared baking dish.
- Bake the crust for about 10 minutes, or until lightly golden. Remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
- Add heavy cream, powdered sugar, vanilla extract, and lemon juice. Beat on medium speed until thickened and soft peaks form, about 3-5 minutes.
- Gently fold in the sliced strawberries, being careful not to overmix.
- Pour the strawberry filling over the cooled graham cracker crust, spreading it evenly.
- Tap the baking dish on the counter to remove air bubbles.
- Cover with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or overnight.
- In a small bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss until well coated.
- Let sit for 15-20 minutes to allow the strawberries to release their juices.
- Remove the dessert bars from the refrigerator and lift them out using the parchment paper.
- Cut into squares or rectangles on a cutting board.
- Spoon the prepared strawberry topping over each bar before serving.
