  • ½ cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until the crumbs are well coated and resemble wet sand.
  3. Line a 9×9 inch baking dish with parchment paper, leaving overhang for easy removal.
  4. Press the graham cracker mixture firmly into the bottom of the prepared baking dish.
  5. Bake the crust for about 10 minutes, or until lightly golden. Remove from the oven and let cool.
  6. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
  7. Add heavy cream, powdered sugar, vanilla extract, and lemon juice. Beat on medium speed until thickened and soft peaks form, about 3-5 minutes.
  8. Gently fold in the sliced strawberries, being careful not to overmix.
  9. Pour the strawberry filling over the cooled graham cracker crust, spreading it evenly.
  10. Tap the baking dish on the counter to remove air bubbles.
  11. Cover with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or overnight.
  12. In a small bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss until well coated.
  13. Let sit for 15-20 minutes to allow the strawberries to release their juices.
  14. Remove the dessert bars from the refrigerator and lift them out using the parchment paper.
  15. Cut into squares or rectangles on a cutting board.
