Ingredients

  • 4 large cucumbers, preferably organic (about 2 pounds total)
  • 1/2 lemon or lime, juiced (optional, for flavor and preservation)
  • 1/2 inch ginger root, peeled (optional, for added flavor and health benefits)
  • Pinch of sea salt (optional, to enhance flavor)
  • Fresh mint leaves (optional, for garnish and flavor)
  • Water (optional, for diluting if the juice is too strong)

Instructions

  1. Wash the cucumbers thoroughly. Use a vegetable brush under running water.
  2. Trim the ends. Cut off both ends of each cucumber.
  3. Peel the cucumbers (optional). Peel if desired, especially for non-organic cucumbers.
  4. Chop the cucumbers. Cut into 1-2 inch pieces.
  5. Prepare the ginger (if using). Peel and chop the ginger root into small pieces.
  6. Set up your juicer. Ensure it’s clean and properly assembled.
  7. Start juicing. Feed the cucumber pieces into the juicer, one at a time. Add ginger along with the cucumbers, if using.
  8. Collect the juice. Collect the juice in a clean container.
  9. Juice the remaining cucumbers. Continue juicing until all cucumbers and ginger are processed.
  10. Add lemon or lime juice (optional). Squeeze the juice of half a lemon or lime into the cucumber juice.
  11. Add sea salt (optional). Add a pinch of sea salt.
  12. Stir well. Combine all the ingredients.
  13. Strain the juice (optional). Strain through a fine-mesh sieve or cheesecloth for a smoother juice.
  14. Serve immediately. Pour the juice into a glass and enjoy!
  15. Garnish (optional). Garnish with fresh mint leaves or a slice of cucumber or lemon.
  16. Dilute with water (optional). Dilute with water if the juice is too strong.
  17. Store properly. Store in an airtight container in the refrigerator for up to 24 hours. Shake well before drinking.

  • Choose firm, smooth, dark green cucumbers. English cucumbers are a good choice.
  • Experiment with other fruits, vegetables, herbs, and spices.
  • Blend with yogurt, avocado, or protein powder for a smoothie.
