- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened (for layering)
- 1/2 cup brown sugar (for filling)
- 1 tablespoon ground cinnamon (for filling)
- 1/2 cup pastry cream or jam (for filling, optional)
- Powdered sugar (for dusting)
Instructions
- In a small bowl, combine the warm milk and active dry yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, whisk together the flour, granulated sugar, and salt. Make a well in the center.
- Pour the frothy yeast mixture into the well along with melted butter, eggs, and vanilla extract.
- Mix until a sticky dough forms.
- Transfer to a floured surface and knead for 5-7 minutes until smooth and elastic. Add more flour if too sticky.
- Place in a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour or until doubled in size.
- Mix brown sugar and ground cinnamon in a small bowl.
- Prepare pastry cream or jam if using.
- Punch down the risen dough and roll it out into a rectangle about 1/4 inch thick.
- Spread softened butter evenly over the dough.
- Sprinkle the cinnamon-sugar mixture over the buttered dough. Add pastry cream or jam if desired.
- Roll the dough tightly from one long edge into a log.
- Cut the log into 12 equal pieces.
- Twist each piece slightly and place in a greased muffin tin.
- Cover the muffin tin and let the cruffins rise for another 30-45 minutes.
- Preheat the oven to 375°F (190°C).
- Bake the cruffins for 20-25 minutes or until golden brown.
- Let cool in the tin for 5 minutes, then transfer to a wire rack.
- Dust with powdered sugar before serving.
- Optionally, fill with more pastry cream or jam using a piping bag.
