  • Author: Maria
  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Description

This easy chicken ramen is a comforting dish featuring tender chicken, flavorful broth, and fresh vegetables. It’s perfect for cozy nights or impressing guests, offering a simple yet satisfying meal that can be customized to your taste.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups water
  • 2 packs of instant ramen noodles (discard the seasoning packets)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cup shiitake mushrooms, sliced (or any mushrooms you prefer)
  • 1 cup baby spinach
  • 2 green onions, chopped
  • 2 soft-boiled eggs (optional)
  • Salt and pepper to taste
  • Chili oil or flakes (optional, for heat)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large pot, heat the sesame oil over medium heat. Add the seasoned chicken breasts and sear for 5-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be white and juices should run clear.
  3. Remove the chicken from the pot and let it rest for a few minutes before slicing it into thin strips.
  4. In the same pot, add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  5. Pour in the chicken broth and water, stirring to combine. Bring to a gentle boil.
  6. Add the soy sauce and sliced shiitake mushrooms. Reduce heat to a simmer and cook for about 10 minutes. Adjust seasoning with salt, pepper, or soy sauce if needed.
  7. In a separate pot, bring water to a boil. Add the instant ramen noodles and cook according to package instructions (about 3-4 minutes).
  8. Drain the noodles and toss with a little sesame oil to prevent sticking.
  9. In each serving bowl, place a portion of the cooked ramen noodles at the bottom.
  10. Ladle the hot broth over the noodles, including mushrooms and garlic.
  11. Top with sliced chicken, baby spinach, and chopped green onions.
  12. Optionally, add a soft-boiled egg (boil eggs for 6-7 minutes, then transfer to an ice bath, peel, and slice in half).
  13. Drizzle with chili oil or sprinkle chili flakes for heat.
  14. Serve hot and encourage everyone to mix their bowls to combine flavors. The warmth of the broth will wilt the spinach slightly.
  15. Enjoy your homemade easy chicken ramen, and feel free to customize with additional toppings like corn, bamboo shoots, or seaweed.
