- 4 cups chicken broth

- 2 packs of instant ramen noodles (discard the seasoning packets)
- 1 tablespoon soy sauce

- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 cup shiitake mushrooms, sliced (or any mushrooms you prefer)
- 1 cup baby spinach
- 2 green onions, chopped
- 2 soft-boiled eggs (optional)
- Salt and pepper to taste
- Chili oil or flakes (optional, for heat)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large pot, heat the sesame oil over medium heat. Add the seasoned chicken breasts and sear for 5-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be white and juices should run clear.
- Remove the chicken from the pot and let it rest for a few minutes before slicing it into thin strips.
- In the same pot, add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
- Pour in the chicken broth and water, stirring to combine. Bring to a gentle boil.
- Add the soy sauce and sliced shiitake mushrooms. Reduce heat to a simmer and cook for about 10 minutes. Adjust seasoning with salt, pepper, or soy sauce if needed.
- In a separate pot, bring water to a boil. Add the instant ramen noodles and cook according to package instructions (about 3-4 minutes).
- Drain the noodles and toss with a little sesame oil to prevent sticking.
- In each serving bowl, place a portion of the cooked ramen noodles at the bottom.
- Ladle the hot broth over the noodles, including mushrooms and garlic.
- Top with sliced chicken, baby spinach, and chopped green onions.
- Optionally, add a soft-boiled egg (boil eggs for 6-7 minutes, then transfer to an ice bath, peel, and slice in half).
- Drizzle with chili oil or sprinkle chili flakes for heat.
- Serve hot and encourage everyone to mix their bowls to combine flavors. The warmth of the broth will wilt the spinach slightly.
