Instructions
- In a large mixing bowl, combine the all-purpose flour, salt, and sugar. Whisk them together until well mixed.
- Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, mixing gently with a fork after each addition until the dough holds together.
- Divide the dough into two equal portions, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
- In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
- Gently fold in the fresh berries and set aside.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- On a floured surface, roll out one disk of dough to about 1/8-inch thickness and cut out circles using a cookie cutter.
- Repeat with the second disk of dough.
- Place about 1 tablespoon of filling in the center of each dough circle, brush edges with beaten egg, fold over, and seal.
- Place assembled bites on the baking sheet, brush tops with egg wash, and bake for 20-25 minutes until golden brown.
- Let cool slightly before transferring to a wire rack. Dust with powdered sugar if desired before serving.
