  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh berries (strawberries, blueberries, or raspberries)
  • 1 egg, beaten (for egg wash)
  • Extra flour for dusting
  • Optional: powdered sugar for dusting before serving

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, salt, and sugar. Whisk them together until well mixed.
  2. Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, one tablespoon at a time, mixing gently with a fork after each addition until the dough holds together.
  4. Divide the dough into two equal portions, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  5. In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  6. Gently fold in the fresh berries and set aside.
  7. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  8. On a floured surface, roll out one disk of dough to about 1/8-inch thickness and cut out circles using a cookie cutter.
  9. Repeat with the second disk of dough.
  10. Place about 1 tablespoon of filling in the center of each dough circle, brush edges with beaten egg, fold over, and seal.
  11. Place assembled bites on the baking sheet, brush tops with egg wash, and bake for 20-25 minutes until golden brown.
  12. Let cool slightly before transferring to a wire rack. Dust with powdered sugar if desired before serving.
