Ingredients
Scale
- 1 pound (450g) boneless, skinless chicken breasts
- 8 ounces (225g) egg noodles
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)
- 1 teaspoon red pepper flakes (optional, for heat)
- Salt and pepper, to taste
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Trim excess fat from the chicken breasts and cut them into bite-sized pieces. Season generously with salt and pepper.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes until golden brown and cooked through. Remove from skillet and set aside.
- In a separate pot, bring salted water to a boil. Cook the egg noodles according to package instructions (6-8 minutes) until al dente. Drain and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in dried Italian herbs and red pepper flakes (if using) for 30 seconds.
- Pour in chicken broth, scraping the skillet to deglaze. Simmer for 3-4 minutes to reduce slightly.
- Lower the heat and stir in heavy cream, simmering for another 2-3 minutes.
- Gradually add grated Parmesan cheese, stirring until melted and combined.
- Return the cooked chicken to the skillet, stirring to coat with the sauce.
- Add the drained egg noodles, tossing gently to combine. Adjust seasoning with salt and pepper as needed.
- Remove from heat and serve in bowls, garnished with chopped parsley and extra Parmesan if desired.
Notes
- For added flavor, consider marinating the chicken in Italian herbs for 30 minutes before cooking.
- This dish pairs well with a side of crusty bread or a simple green salad.
