This Ginger Soy Glazed Cod features tender cod fillets marinated in a savory ginger-soy mixture, baked to perfection, and topped with a sweet glaze. It’s a quick and delicious dish ideal for weeknight dinners or special occasions.

- 1/4 cup soy sauce
- 2 tablespoons fresh ginger, grated
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1 tablespoon water
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
- Cooked rice or quinoa (for serving)
Instructions
- In a medium-sized bowl, combine the soy sauce, grated ginger, honey, rice vinegar, sesame oil, and minced garlic. Whisk until the honey is fully dissolved and the mixture is well combined.
- Place the cod fillets in a shallow dish or resealable plastic bag and pour the marinade over the cod, ensuring each fillet is well coated. Cover the dish with plastic wrap or seal the bag tightly.
- Let the cod marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- In a small saucepan, take about 1/4 cup of the marinade (not the one the fish was in).
- Add the cornstarch and water to the saucepan and whisk until smooth.
- Place the saucepan over medium heat and bring to a gentle simmer, stirring continuously until the glaze thickens (about 3-5 minutes). Remove from heat and set aside.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Remove the cod from the marinade and place the fillets on the prepared baking sheet. Discard the leftover marinade.
- Brush the thickened glaze generously over the top of each cod fillet.
- Bake the cod for about 12-15 minutes, or until it flakes easily with a fork.
- Once cooked, let the cod rest for a couple of minutes.
- Serve over a bed of cooked rice or quinoa.
- Drizzle any remaining glaze from the baking sheet over the cod.
- Garnish with sliced green onions and sesame seeds.
- Serve immediately with steamed vegetables like broccoli or snap peas.
