  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. In a medium-sized bowl, combine the soy sauce, grated ginger, honey, rice vinegar, sesame oil, and minced garlic. Whisk until the honey is fully dissolved and the mixture is well combined.
  2. Place the cod fillets in a shallow dish or resealable plastic bag and pour the marinade over the cod, ensuring each fillet is well coated. Cover the dish with plastic wrap or seal the bag tightly.
  3. Let the cod marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  4. In a small saucepan, take about 1/4 cup of the marinade (not the one the fish was in).
  5. Add the cornstarch and water to the saucepan and whisk until smooth.
  6. Place the saucepan over medium heat and bring to a gentle simmer, stirring continuously until the glaze thickens (about 3-5 minutes). Remove from heat and set aside.
  7. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  8. Remove the cod from the marinade and place the fillets on the prepared baking sheet. Discard the leftover marinade.
  9. Brush the thickened glaze generously over the top of each cod fillet.
  10. Bake the cod for about 12-15 minutes, or until it flakes easily with a fork.
