- 1/2 teaspoon black pepper
- 1 lemon, zested and juiced
Instructions
- In a medium-sized bowl, combine the minced garlic, chopped rosemary, and chopped thyme.
- Add the olive oil and balsamic vinegar to the bowl.
- Sprinkle in the salt and black pepper.
- Add the lemon zest and juice.
- Whisk all the ingredients together until well combined.
- Place the lamb chops in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the lamb chops, ensuring each chop is well coated.
- Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill to medium-high heat.
- If using a gas grill, allow it to heat up for about 10-15 minutes.
- Lightly oil the grill grates to prevent sticking.
- Remove the lamb chops from the marinade, allowing excess marinade to drip off. Discard the leftover marinade.
- Place the lamb chops on the hot grill in a single layer.
- Grill for about 4-5 minutes on one side to achieve a nice sear.
- Flip the lamb chops and grill for another 4-5 minutes for medium-rare, or an additional 2-3 minutes per side for more well-done.
- Check for doneness with a meat thermometer; medium-rare should be around 145°F (63°C).
- Remove from the grill and let rest for about 5 minutes before serving.
- After resting, serve the lamb chops warm, garnished with additional herbs or lemon wedges if desired.
