These grilled baby potatoes are a flavorful side dish seasoned with garlic, smoked paprika, and rosemary. Charred to perfection, they are tender and make a great accompaniment to any meal or can be enjoyed on their own!

- 2 pounds baby potatoes (Yukon Gold or red potatoes)
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried rosemary (or fresh)
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Wash the baby potatoes thoroughly under cold running water to remove any dirt or debris.
- Pat them dry with a kitchen towel to ensure the olive oil and seasonings stick well.
- Cut the potatoes in half; quarter larger baby potatoes for even cooking.
- In a large mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried rosemary, salt, and pepper.
- Whisk the mixture until well combined.
- Add the halved potatoes to the bowl and toss to coat evenly in the seasoning mixture.
- Preheat your grill to medium-high heat (around 400°F or 200°C).
- For charcoal grills, ensure coals are evenly distributed and have a nice layer of ash.
- For gas grills, turn on the burners and close the lid for 10-15 minutes.
- Use a grill basket or skewers for grilling; soak skewers in water for 30 minutes if using.
- Place the seasoned potatoes in a grill basket or thread onto skewers, leaving space between each.
- Cook on the grill for 15-20 minutes, turning occasionally until golden brown and tender.
- Check for doneness by piercing a potato with a fork; if it goes in easily, theyre ready.
- Remove from the grill and let rest for a few minutes.
- Transfer the grilled potatoes to a serving platter, arranging them attractively.
- Drizzle with additional olive oil and sprinkle with fresh parsley for added flavor and color.
- Serve warm as a side dish or snack.
Notes
- Feel free to customize the seasoning to your taste. Add more spices or herbs as desired.
- These potatoes can also be made in the oven if grilling isnt an option; roast at 400°F for about 25-30 minutes.
