  • 1 teaspoon smoked paprika
  • 1 teaspoon dried rosemary (or fresh)
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash the baby potatoes thoroughly under cold running water to remove any dirt or debris.
  2. Pat them dry with a kitchen towel to ensure the olive oil and seasonings stick well.
  3. Cut the potatoes in half; quarter larger baby potatoes for even cooking.
  4. In a large mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried rosemary, salt, and pepper.
  5. Whisk the mixture until well combined.
  6. Add the halved potatoes to the bowl and toss to coat evenly in the seasoning mixture.
  7. Preheat your grill to medium-high heat (around 400°F or 200°C).
  8. For charcoal grills, ensure coals are evenly distributed and have a nice layer of ash.
  9. For gas grills, turn on the burners and close the lid for 10-15 minutes.
  10. Use a grill basket or skewers for grilling; soak skewers in water for 30 minutes if using.
  11. Place the seasoned potatoes in a grill basket or thread onto skewers, leaving space between each.
  12. Cook on the grill for 15-20 minutes, turning occasionally until golden brown and tender.
  13. Check for doneness by piercing a potato with a fork; if it goes in easily, they’re ready.
  14. Remove from the grill and let rest for a few minutes.
  15. Transfer the grilled potatoes to a serving platter, arranging them attractively.
  16. Drizzle with additional olive oil and sprinkle with fresh parsley for added flavor and color.
  17. Serve warm as a side dish or snack.
