  • 1 cup frozen corn
  • 1 cup green beans, chopped
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Gather all your ingredients. Dice the onion and bell pepper, slice the carrots, and chop the celery. Mince the garlic and set aside. If using fresh green beans, wash and chop them. Measure out the beef broth, Worcestershire sauce, and spices.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and break it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Add the diced onion, bell pepper, carrots, and celery to the pot. Cook for about 5 minutes until the vegetables start to soften. Add the minced garlic and cook for an additional minute.
  4. Pour in the diced tomatoes (with juice) and beef broth. Stir to combine. Add the frozen corn and chopped green beans. Stir in Worcestershire sauce, dried basil, and dried oregano. Season with salt and pepper to taste.
  5. Bring the soup to a gentle boil over medium-high heat. Once boiling, reduce heat to low and cover. Let it simmer for 30-40 minutes, stirring occasionally. Taste and adjust seasoning if necessary.
  6. Remove from heat. For a thicker soup, let it sit uncovered for a few minutes. Ladle into bowls and garnish with freshly chopped parsley.
