  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 12 corn tortillas (or your favorite type)

Toppings (Optional but Highly Recommended!):

  • Shredded lettuce
  • Diced tomatoes
  • Shredded cheddar cheese (or Monterey Jack, or a blend!)
  • Sour cream or Greek yogurt
  • Salsa (mild, medium, or hot – your choice!)
  • Avocado slices or guacamole
  • Chopped cilantro
  • Lime wedges

Instructions:

Preparing the Turkey Filling:

  1. Heat the olive oil in a large skillet over medium heat. Make sure the skillet is nice and hot before adding the turkey. This will help it brown properly.
  2. Add the ground turkey to the skillet and break it up with a spoon. Cook, stirring occasionally, until the turkey is no longer pink. This usually takes about 5-7 minutes. You want to make sure the turkey is cooked through completely for food safety.
  3. Drain any excess grease from the skillet. This step is important, especially if you’re using ground turkey that isn’t super lean. Nobody wants greasy tacos! You can carefully tilt the skillet and spoon out the grease, or use a colander.
  4. Add the chopped onion and bell pepper to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes. The onions should become translucent and the peppers should be slightly tender.
  5. Stir in the minced garlic and cook for 1 minute more, until fragrant. Be careful not to burn the garlic, as it can become bitter. The aroma should be amazing at this point!
  6. Add the black beans, corn, and diced tomatoes (with their juice) to the skillet. Stir to combine all the ingredients.

Assembling the Tacos:

  1. Place a warmed tortilla on a plate.
  2. Spoon a generous amount of the turkey filling into the center of the tortilla. Don’t overfill it, or it will be difficult to fold!
  3. Top with your favorite toppings. This is where you can get creative! I love adding shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, avocado, and cilantro.
  4. Fold the tortilla in half and enjoy! Serve immediately.

Tips and Variations:

  • Make it spicier: Add a pinch of cayenne pepper or a dash of hot sauce to the turkey filling for extra heat. You can also use a spicier taco seasoning.
