  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (any color)
  • 1 cup snap peas
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Start by trimming any excess fat from the chicken thighs.
  2. In a large bowl, season the chicken with salt and pepper.
  3. In a small bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil.
  4. Pour half of the marinade over the chicken, making sure each piece is well coated. Let it marinate for at least 30 minutes.
  5. Heat the olive oil in a large skillet over medium-high heat. Add the marinated chicken thighs to the skillet.
  6. Cook the chicken for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  7. Once cooked, remove the chicken from the skillet and let it rest for a few minutes.
  8. While the chicken is resting, pour the remaining marinade into the skillet. Bring it to a simmer over medium heat, stirring occasionally. Let it cook for about 5 minutes until it thickens slightly.
  9. In the same skillet, add the broccoli florets, sliced bell peppers, and snap peas. Stir-fry the vegetables for about 4-5 minutes until they are tender-crisp.
  10. If you prefer your vegetables softer, you can cover the skillet for a minute or two to steam them slightly.
  11. Once the vegetables are cooked to your liking, remove them from the skillet and set them aside.
  12. Start by placing a generous scoop of cooked rice at the bottom of each bowl.
  13. Slice the rested chicken thighs into strips and arrange them on top of the rice.
  14. Add a portion of the stir-fried vegetables on the side of the chicken.
  15. Drizzle the thickened honey garlic sauce over the chicken and vegetables.
  16. For a finishing touch, sprinkle sliced green onions and sesame seeds on top.
