- 1.5 pounds of boneless, skinless chicken thighs
- 1/2 cup of honey
- 1/4 cup of soy sauce
- 4 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1 tablespoon of rice vinegar
- 1 tablespoon of sesame oil
- 1 teaspoon of cornstarch
- 2 tablespoons of water
- Salt and pepper to taste
- 2 tablespoons of vegetable oil for cooking
- Chopped green onions for garnish
- Sesame seeds for garnish (optional)
Instructions
- In a medium-sized bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil. Whisk until smooth and slightly thickened.
- Season chicken thighs with salt and pepper on both sides.
- Place seasoned chicken in a resealable bag or shallow dish. Pour marinade over chicken, ensuring each piece is coated. Seal or cover and refrigerate for at least 30 minutes (up to overnight).
- Remove chicken from the marinade, allowing excess to drip off. Reserve marinade for later.
- Heat vegetable oil in a large skillet over medium-high heat. Add chicken thighs, cooking in batches if necessary, for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Remove chicken from skillet and cover loosely with aluminum foil to keep warm.
- Pour reserved marinade into the same skillet and bring to a boil, scraping up browned bits from the pan.
- In a small bowl, mix cornstarch with water to create a slurry. Whisk into boiling marinade to thicken the sauce, cooking for an additional 2-3 minutes until desired consistency is reached.
- Slice cooked chicken or leave whole, then return to skillet, coating in the thickened sauce. Heat through for 1-2 minutes.
- Transfer to a serving platter, garnishing with chopped green onions and sesame seeds if desired. Serve with steamed rice or quinoa, and enjoy!
