  • 1 teaspoon of cornstarch
  • 2 tablespoons of water
  • Salt and pepper to taste
  • 2 tablespoons of vegetable oil for cooking
  • Chopped green onions for garnish
  • Sesame seeds for garnish (optional)

Instructions

  1. In a medium-sized bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil. Whisk until smooth and slightly thickened.
  2. Season chicken thighs with salt and pepper on both sides.
  3. Place seasoned chicken in a resealable bag or shallow dish. Pour marinade over chicken, ensuring each piece is coated. Seal or cover and refrigerate for at least 30 minutes (up to overnight).
  4. Remove chicken from the marinade, allowing excess to drip off. Reserve marinade for later.
  5. Heat vegetable oil in a large skillet over medium-high heat. Add chicken thighs, cooking in batches if necessary, for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  6. Remove chicken from skillet and cover loosely with aluminum foil to keep warm.
  7. Pour reserved marinade into the same skillet and bring to a boil, scraping up browned bits from the pan.
  8. In a small bowl, mix cornstarch with water to create a slurry. Whisk into boiling marinade to thicken the sauce, cooking for an additional 2-3 minutes until desired consistency is reached.
  9. Slice cooked chicken or leave whole, then return to skillet, coating in the thickened sauce. Heat through for 1-2 minutes.
  10. Transfer to a serving platter, garnishing with chopped green onions and sesame seeds if desired. Serve with steamed rice or quinoa, and enjoy!
