  • 2 eggs, lightly beaten
  • 3 tablespoons of soy sauce
  • 1 tablespoon of sweet soy sauce (kecap manis)
  • 1 teaspoon of fish sauce (optional)
  • Salt and pepper to taste
  • 2 green onions, chopped
  • Fresh cilantro (optional)

Instructions

  1. Cook the Rice: If you haven’t done so already, cook your jasmine rice according to package instructions. For the best fried rice, it’s ideal to use rice that has been cooked and cooled, preferably left in the fridge overnight.
  2. Prep the Prawns: Rinse the prawns under cold water and pat them dry with a paper towel.
  3. Chop the Vegetables: Mince the garlic, finely chop the onion, and slice the red chili. Dice the carrot into small cubes and set aside.
  4. Beat the Eggs: In a small bowl, lightly beat the eggs and set them aside.
  5. Heat the Oil: In a large wok or a non-stick frying pan, heat the vegetable oil over medium-high heat.
  6. Sauté Aromatics: Add the minced garlic and chopped onion to the hot oil. Stir-fry for about 1-2 minutes until the onion becomes translucent.
  7. Add the Prawns: Toss in the prawns and cook for about 2-3 minutes, or until they turn pink and opaque.
