- 4 slices of good-quality bread (sourdough or whole grain)
- 2 tablespoons of unsalted butter, softened
- 1 cup of grated Irish cheddar cheese
- 1/2 cup of grated Irish blue cheese (optional)
- 1/4 cup of finely chopped scallions (green onions)
- 1/4 cup of chopped fresh parsley
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
- Optional: a pinch of cayenne pepper
Instructions
- In a medium-sized mixing bowl, combine the grated Irish cheddar cheese and the grated Irish blue cheese (if using).
- Add the finely chopped scallions and parsley to the cheese mixture.
- Stir in the Dijon mustard for a subtle tang.
- Season with salt, pepper, and cayenne pepper (if desired). Mix until well combined.
- Lay the slices of bread on a clean surface.
- Spread a generous layer of softened butter on one side of each slice.
- Flip the slices over so the unbuttered side is facing up.
- Take two slices of bread (buttered side down) and place them on your work surface.
- Evenly distribute the cheese mixture over the unbuttered side of each slice.
- Top with the remaining two slices of bread, buttered side up.
- Heat a non-stick skillet or frying pan over medium heat.
- Place one of the assembled toasties in the pan (or both if space allows).
- Cook for about 3-4 minutes on one side until golden brown and crispy.
- Carefully flip the toastie and cook for another 3-4 minutes until golden brown and the cheese is melted.
- If the bread browns too quickly, lower the heat and cover the pan with a lid to help the cheese melt.
- Remove the toasties from the pan and place them on a cutting board.
- Let them sit for a minute to cool slightly before cutting.
