  • 1/4 cup of finely chopped scallions (green onions)
  • 1/4 cup of chopped fresh parsley
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste
  • Optional: a pinch of cayenne pepper

Instructions

  1. In a medium-sized mixing bowl, combine the grated Irish cheddar cheese and the grated Irish blue cheese (if using).
  2. Add the finely chopped scallions and parsley to the cheese mixture.
  3. Stir in the Dijon mustard for a subtle tang.
  4. Season with salt, pepper, and cayenne pepper (if desired). Mix until well combined.
  5. Lay the slices of bread on a clean surface.
  6. Spread a generous layer of softened butter on one side of each slice.
  7. Flip the slices over so the unbuttered side is facing up.
  8. Take two slices of bread (buttered side down) and place them on your work surface.
  9. Evenly distribute the cheese mixture over the unbuttered side of each slice.
  10. Top with the remaining two slices of bread, buttered side up.
  11. Heat a non-stick skillet or frying pan over medium heat.
  12. Place one of the assembled toasties in the pan (or both if space allows).
  13. Cook for about 3-4 minutes on one side until golden brown and crispy.
  14. Carefully flip the toastie and cook for another 3-4 minutes until golden brown and the cheese is melted.
  15. If the bread browns too quickly, lower the heat and cover the pan with a lid to help the cheese melt.
