Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the butter, sugar, and lemon zest until light and fluffy.
- Beat in the egg and lemon juice.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the dried lavender.
- Drop by rounded tablespoons onto ungreased baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a more intense lemon flavor, add 1 teaspoon of lemon zest.
- Dried lavender buds can be found at most health food stores or online.
