Instructions
- In a medium bowl, whisk together the all-purpose flour, matcha powder, baking powder, and salt.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the butter-sugar mixture and mix until smooth and creamy.
- Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
- If using, fold in the white chocolate chips.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Remove the chilled dough from the refrigerator. Portion out the dough and roll it into balls, placing them on the prepared baking sheets with 2 inches of space between each.
- Gently flatten each cookie ball with your hand or the bottom of a glass.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
- Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
- In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the powdered sugar and vanilla extract, mixing until well combined and fluffy. Adjust sweetness if necessary.
- For a stronger matcha flavor, add a teaspoon of matcha powder and mix until incorporated.
- Once the cookies are completely cooled, spread a generous amount of cream cheese filling on the flat side of one cookie.
- Top with another cookie, flat side down, and gently press to spread the filling to the edges.
- Repeat with the remaining cookies and filling.
- Dust the tops with extra matcha powder if desired.
