  • 1 teaspoon vanilla extract (for filling)
  • Extra matcha powder for dusting (optional)

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, matcha powder, baking powder, and salt.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  3. Add the egg and vanilla extract to the butter-sugar mixture and mix until smooth and creamy.
  4. Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  5. If using, fold in the white chocolate chips.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  8. Remove the chilled dough from the refrigerator. Portion out the dough and roll it into balls, placing them on the prepared baking sheets with 2 inches of space between each.
  9. Gently flatten each cookie ball with your hand or the bottom of a glass.
  10. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
  11. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
  12. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  13. Add the powdered sugar and vanilla extract, mixing until well combined and fluffy. Adjust sweetness if necessary.
  14. For a stronger matcha flavor, add a teaspoon of matcha powder and mix until incorporated.
  15. Once the cookies are completely cooled, spread a generous amount of cream cheese filling on the flat side of one cookie.
  16. Top with another cookie, flat side down, and gently press to spread the filling to the edges.
  17. Repeat with the remaining cookies and filling.
  18. Dust the tops with extra matcha powder if desired.
