Description

A smoky and refreshing Mezcal Sour cocktail with a perfect balance of sweet, sour, and smoky flavors, topped with a frothy egg white and Angostura bitters.


Ingredients

  • 2 ounces Mezcal (smoky preferred)
  • 1 ounce Fresh Lime Juice
  • ¾ ounce Agave Nectar (adjust to taste)
  • 1 Egg White (optional)
  • 3 Dashes Angostura Bitters
  • Lime Wheel or Wedge (for garnish)
  • Optional: Smoked Salt (for rimming the glass)

Instructions

  1. (Optional) Prepare the Glass: If desired, rim a coupe or cocktail glass with smoked salt. Moisten the rim with a lime wedge, dip in smoked salt, and chill in the freezer.
  2. Combine Ingredients (Dry Shake): In a cocktail shaker, combine mezcal, lime juice, agave nectar, and egg white (if using). Shake vigorously for 30-45 seconds (dry shake).
  3. Add Ice (Wet Shake): Add ice to the shaker (about two-thirds full). Shake vigorously for another 15-20 seconds.
  4. Double Strain: Place a Hawthorne strainer over the shaker and a fine-mesh strainer over your prepared (or regular) cocktail glass. Pour the cocktail through both strainers.
  5. Garnish: Garnish with a lime wheel or wedge. Express lime peel oils over the drink (optional). Add 3 dashes of Angostura bitters on top of the foam.

Notes

  • Use fresh lime juice for the best flavor.
  • Adjust the agave nectar to your sweetness preference.
  • For egg white safety, use pasteurized egg whites or aquafaba (chickpea liquid) as a vegan substitute.
  • Choose a mezcal that is subtly smoky, especially if you are new to the spirit. Espadín is a good starting point.
  • Don’t skimp on the shaking! The dry shake is essential for creating a stable foam, and the wet shake chills the drink and further develops the texture.
  • Experiment with bitters. Orange bitters, chocolate bitters, or even spicy bitters can add interesting nuances to the cocktail.
  • Taste as you go. After the dry shake, give it a little taste and adjust the agave nectar or lime juice as needed.
