- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 4 cups chicken broth
- 12 ounces penne pasta (or pasta of your choice)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese, plus more for serving
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for garnish (optional)
Instructions
- In a large bowl, combine the chicken with salt, black pepper, garlic powder, Italian seasoning, and red pepper flakes (if using). Toss until the chicken is evenly coated with the spices.
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Once the oil is hot, add the seasoned chicken pieces in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the pot and set it aside on a plate.
- In the same pot, add the diced onion and sauté for about 3-4 minutes until it becomes translucent and fragrant.
- Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to prevent burning. The mixture should be aromatic.
- Pour in the can of diced tomatoes (with their juices) and stir to combine with the onions and garlic. Allow the mixture to simmer for about 2-3 minutes.
- Add the chicken broth to the pot, scraping the bottom to deglaze and incorporate any browned bits from the chicken. Bring the mixture to a gentle boil.
- Once the broth is boiling, add the penne pasta to the pot. Stir well to ensure the pasta is submerged in the liquid.
- Reduce the heat to medium-low, cover the pot, and let the pasta cook for about 10-12 minutes, stirring occasionally. Check for doneness; the pasta should be al dente and most of the liquid should be absorbed.
- Once the pasta is cooked, return the cooked chicken to the pot. Stir to combine.
- Pour in the heavy cream and mix well. This will create a creamy sauce that coats the pasta and chicken.
- Add the grated Parmesan cheese and shredded mozzarella cheese. Stir until the cheeses are melted and the sauce is creamy and smooth. If the sauce is too thick, you can add a splash of chicken broth or water to reach your desired consistency.
- Remove the pot from heat and let it sit for a couple of minutes to thicken slightly.
