- 2 to 3 pounds of pork loin or pork shoulder
- 1 cup fresh orange juice (about 4–5 oranges)
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 1/4 cup apple cider vinegar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 tablespoon cornstarch (optional, for thickening the glaze)
- 2 tablespoons water (optional, for thickening the glaze)
- Fresh parsley or green onions for garnish (optional)
Instructions
- In a medium-sized bowl, combine the fresh orange juice, brown sugar, soy sauce, apple cider vinegar, minced garlic, grated ginger, ground cinnamon, black pepper, and salt. Whisk until the brown sugar is fully dissolved.
- Place the pork in a large resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish with plastic wrap.
- Refrigerate the pork for at least 4 hours, ideally overnight.
- Preheat your oven to 350°F (175°C).
- After marinating, remove the pork from the refrigerator and let it sit at room temperature for about 30 minutes.
- Place the marinated pork in a roasting pan and pour any remaining marinade over the top. Optionally, add orange slices on top.
- Cover the roasting pan with aluminum foil.
- Roast the pork for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C).
- About 30 minutes before the pork is done, remove the foil to allow the glaze to caramelize.
- In a small saucepan, bring the remaining marinade to a boil over medium heat. In a small bowl, mix cornstarch with 2 tablespoons of water to create a slurry. Slowly whisk the slurry into the boiling marinade and cook for another 2-3 minutes until thickened.
- Once the pork reaches the desired temperature, remove it from the oven and let it rest for 15-20 minutes.
- Slice the pork into thick pieces, about 1/2 inch thick.
- Arrange the sliced pork on a serving platter and drizzle the thickened orange glaze over the top. Garnish with freshly chopped parsley or sliced green onions if desired.
- Serve with your favorite sides, such as roasted vegetables, rice, or a fresh salad.
