- 1.5 lbs Russet Potatoes, peeled and cut into 1/2-inch thick fries
- 4 cloves Garlic, minced
- 1/4 cup Olive Oil
- 1/2 cup grated Parmesan Cheese, finely grated
- 2 tablespoons fresh Parsley, chopped
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1/4 teaspoon Paprika
- Salt and freshly ground Black Pepper to taste
- Optional: 1/4 cup Mayonnaise, for dipping
- Optional: 1 tablespoon Lemon Juice, for dipping sauce
- Optional: Pinch of Red Pepper Flakes, for dipping sauce
Instructions
- Soak the Fries: Place the cut potatoes in a large bowl filled with cold water. Soak for at least 30 minutes (up to 2 hours), changing the water a couple of times.
- Preheat Oven: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Dry the Fries: Drain the fries and pat them completely dry with paper towels.
- Combine Garlic and Olive Oil: In a small bowl, combine the minced garlic and olive oil. Let sit for a few minutes.
- Prepare Dry Seasoning: In another small bowl, combine garlic powder, onion powder, paprika, salt, and pepper.
- Toss with Garlic Oil: Place the dried fries in a large bowl. Drizzle with garlic-infused olive oil and toss to coat.
- Add Dry Seasoning: Sprinkle the dry seasoning mixture over the fries and toss to coat evenly.
- Add Parmesan Cheese: Add half of the grated Parmesan cheese to the fries and toss gently. Reserve the remaining Parmesan.
- Arrange on Baking Sheet: Spread the fries in a single layer on the prepared baking sheet. Avoid overcrowding.
- Bake: Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Add Remaining Parmesan: Remove from oven and sprinkle with remaining Parmesan cheese. Return to the oven for 2-3 minutes, or until the Parmesan is melted and slightly golden.
- Garnish and Serve: Remove from oven and sprinkle with fresh chopped parsley. Serve immediately.
- Combine Ingredients: In a small bowl, combine mayonnaise, lemon juice, and red pepper flakes (if using).
- Mix Well: Stir until well combined.
- Taste and Adjust: Adjust lemon juice or red pepper flakes to your liking.
- Serve: Serve alongside the fries.

- Drying the fries thoroughly is also essential.
- Don’t overcrowd the baking sheet.
- For extra crispy fries, try a double baking method: After the initial bake, let cool slightly, increase oven temperature to 450°F (230°C), and bake for another 5-10 minutes.
- Using a wire rack on top of the baking sheet can help the fries crisp up even more evenly.
- Use high-quality Russet potatoes.
