  • 4 cloves Garlic, minced
  • 1/4 cup Olive Oil
  • 1/2 cup grated Parmesan Cheese, finely grated
  • 2 tablespoons fresh Parsley, chopped
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Paprika
  • Salt and freshly ground Black Pepper to taste
  • Optional: 1/4 cup Mayonnaise, for dipping
  • Optional: 1 tablespoon Lemon Juice, for dipping sauce
  • Optional: Pinch of Red Pepper Flakes, for dipping sauce

Instructions

  1. Soak the Fries: Place the cut potatoes in a large bowl filled with cold water. Soak for at least 30 minutes (up to 2 hours), changing the water a couple of times.
  2. Preheat Oven: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  3. Dry the Fries: Drain the fries and pat them completely dry with paper towels.
  4. Combine Garlic and Olive Oil: In a small bowl, combine the minced garlic and olive oil. Let sit for a few minutes.
  5. Prepare Dry Seasoning: In another small bowl, combine garlic powder, onion powder, paprika, salt, and pepper.
  6. Toss with Garlic Oil: Place the dried fries in a large bowl. Drizzle with garlic-infused olive oil and toss to coat.
  7. Add Dry Seasoning: Sprinkle the dry seasoning mixture over the fries and toss to coat evenly.
  8. Add Parmesan Cheese: Add half of the grated Parmesan cheese to the fries and toss gently. Reserve the remaining Parmesan.
  9. Arrange on Baking Sheet: Spread the fries in a single layer on the prepared baking sheet. Avoid overcrowding.
  10. Bake: Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  11. Add Remaining Parmesan: Remove from oven and sprinkle with remaining Parmesan cheese. Return to the oven for 2-3 minutes, or until the Parmesan is melted and slightly golden.
  12. Garnish and Serve: Remove from oven and sprinkle with fresh chopped parsley. Serve immediately.
  13. Combine Ingredients: In a small bowl, combine mayonnaise, lemon juice, and red pepper flakes (if using).
