Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 cups fresh peaches, peeled and sliced
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, salt, and ground cinnamon. Whisk together until well combined.
  3. In a separate bowl, mix the melted butter, egg, and vanilla extract. Stir until the mixture is smooth.
  4. Pour the wet ingredients into the dry ingredients. Using a spatula or your hands, mix until the dough starts to come together. It should be crumbly but hold together when pressed.
  5. Reserve about 1 cup of the mixture for the crumble topping. Press the remaining mixture evenly into the bottom of the prepared baking dish to form the crust. Use your fingers or the back of a measuring cup to pack it down firmly.
  6. In a large bowl, add the sliced peaches. If using fresh peaches, ensure they are ripe for the best flavor.
  7. Sprinkle the granulated sugar over the peaches, followed by the lemon juice, cornstarch, ground cinnamon, and salt. Gently toss the mixture until the peaches are evenly coated with the sugar and spices.
  8. Let the peach mixture sit for about 10-15 minutes. This allows the peaches to release some of their juices, which will help create a delicious filling.
  9. Once the peach filling has rested, pour the mixture over the prepared crust in the baking dish. Spread it out evenly with a spatula to ensure every bite has a taste of peach.
  10. Take the reserved crumble mixture and sprinkle it evenly over the peach filling. Make sure to cover the filling as much as possible, leaving some gaps for the peaches to peek through.
  11. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the crumble topping is golden brown and the peach filling is bubbling around the edges.
  12. Once baked, remove the dish from the oven and allow it to cool in the pan for at least 30 minutes. This cooling time helps the bars set up and makes them easier to cut.
  13. After the bars have cooled, use a sharp knife to cut them into squares or rectangles, depending on your preference.
  14. For an extra touch, serve the bars warm with a scoop of vanilla ice cream or a dollop of whipped cream on top.
  15. Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. You can also freeze the bars for longer storage; just make sure to wrap them tightly in plastic wrap and then in aluminum foil.

Notes

  • Choose ripe peaches for the best flavor. If peaches are not in season, you can use frozen peaches; just thaw and drain excess liquid before using.
  • Feel free to add other fruits like blueberries or raspberries for a mixed fruit experience.
