- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 24 mini peanut butter cups, unwrapped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the peanut butter, granulated sugar, egg, and vanilla extract. Blend until smooth and creamy.
- Add the baking soda and salt to the mixture. Gently fold in until just combined.
- Fold in the semi-sweet chocolate chips until evenly distributed.
- Line a baking sheet with parchment paper.
- Scoop out portions of dough (about 1 inch in diameter) and roll into balls. Place them on the prepared baking sheet, leaving 2 inches of space between each.
- Press down in the center of each dough ball to create a small dimple for the peanut butter cups.
- Bake for 10-12 minutes until slightly golden around the edges but still soft in the center.
- Immediately press a mini peanut butter cup into the center of each cookie after removing from the oven.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to a week or freeze for longer storage.
- Serve warm with a glass of cold milk or a scoop of vanilla ice cream for an irresistible treat!
