- 1/2 cup semi-sweet chocolate chips
- 1/4 teaspoon sea salt (optional)

Instructions
- In a medium mixing bowl, combine 1 cup of creamy peanut butter, 1/2 cup of powdered sugar, and 1/4 cup of melted unsalted butter. Mix until smooth and creamy using a spatula.
- Add 1 teaspoon of vanilla extract to the mixture and stir well until fully incorporated.
- Taste the mixture and add a pinch of sea salt if desired for extra flavor.
- In a microwave-safe bowl, combine 1 1/2 cups of milk chocolate chips and 1/2 cup of semi-sweet chocolate chips.
- Microwave the chocolate chips in 30-second intervals, stirring in between, until melted and smooth (about 1-2 minutes total). Be careful not to overheat.
- Let the melted chocolate cool slightly while preparing the cupcake liners.
- Line a mini muffin tin with mini cupcake liners (this recipe makes about 24 cups).
- Add about 1 tablespoon of melted chocolate to the bottom of each liner, spreading it evenly.
- Place about 1 tablespoon of the peanut butter filling on top of the chocolate layer in each liner and gently press it down.
- Pour another tablespoon of melted chocolate over the peanut butter filling in each liner, spreading it evenly to cover completely.
- Optionally, sprinkle a tiny pinch of sea salt on top of the melted chocolate.
- Place the muffin tin in the refrigerator and let the cups chill for at least 1-2 hours, or until the chocolate is completely set.
- Once set, carefully remove the peanut butter cups from the muffin tin and peel away the cupcake liners. Use a small knife to help loosen the edges if needed.
- Store the peanut butter cups in an airtight container in the refrigerator for up to two weeks.
- Before serving, let them sit at room temperature for a few minutes to soften slightly.
