  • 1/2 cup semi-sweet chocolate chips
  • 1/4 teaspoon sea salt (optional)
  • Mini cupcake liners

Instructions

  1. In a medium mixing bowl, combine 1 cup of creamy peanut butter, 1/2 cup of powdered sugar, and 1/4 cup of melted unsalted butter. Mix until smooth and creamy using a spatula.
  2. Add 1 teaspoon of vanilla extract to the mixture and stir well until fully incorporated.
  3. Taste the mixture and add a pinch of sea salt if desired for extra flavor.
  4. In a microwave-safe bowl, combine 1 1/2 cups of milk chocolate chips and 1/2 cup of semi-sweet chocolate chips.
  5. Microwave the chocolate chips in 30-second intervals, stirring in between, until melted and smooth (about 1-2 minutes total). Be careful not to overheat.
  6. Let the melted chocolate cool slightly while preparing the cupcake liners.
  7. Line a mini muffin tin with mini cupcake liners (this recipe makes about 24 cups).
  8. Add about 1 tablespoon of melted chocolate to the bottom of each liner, spreading it evenly.
  9. Place about 1 tablespoon of the peanut butter filling on top of the chocolate layer in each liner and gently press it down.
  10. Pour another tablespoon of melted chocolate over the peanut butter filling in each liner, spreading it evenly to cover completely.
  11. Optionally, sprinkle a tiny pinch of sea salt on top of the melted chocolate.
  12. Place the muffin tin in the refrigerator and let the cups chill for at least 1-2 hours, or until the chocolate is completely set.
  13. Once set, carefully remove the peanut butter cups from the muffin tin and peel away the cupcake liners. Use a small knife to help loosen the edges if needed.
  14. Store the peanut butter cups in an airtight container in the refrigerator for up to two weeks.
  15. Before serving, let them sit at room temperature for a few minutes to soften slightly.
