  • 1 pound of thinly sliced beef (ribeye or sirloin)
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup mushrooms, sliced (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 1/2 cups provolone cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add about a tablespoon of salt.
  2. Add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside, drizzling with a little olive oil to prevent sticking.
  3. In a large skillet, heat olive oil over medium-high heat.
  4. Add the thinly sliced beef, season with salt and pepper, and cook for 3-4 minutes until browned but not fully cooked. Remove and set aside.
  5. In the same skillet, add onion, green bell pepper, and mushrooms (if using). Sauté for 5-7 minutes until softened.
  6. Add minced garlic and cook for an additional minute.
  7. Return the beef to the skillet, stir in Worcestershire sauce, and mix well.
  8. Pour in beef broth and bring to a simmer. Cook for 5 minutes.
  9. Reduce heat to low, stir in heavy cream, and simmer for another 2-3 minutes.
  10. Gradually add provolone and Parmesan cheese, stirring continuously until melted and smooth. Adjust seasoning if necessary.
  11. Add the cooked pasta to the skillet, tossing gently to coat with the sauce. If too thick, add a splash of beef broth or cream.
  12. Remove from heat once well combined and heated through.
  13. Serve hot, garnished with freshly chopped parsley and extra cheese if desired. Pairs well with a side salad or crusty bread.
