- 8 ounces of pasta (penne or rigatoni)
- 1 pound of thinly sliced beef (ribeye or sirloin)
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 cup mushrooms, sliced (optional)
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 cup heavy cream
- 1 1/2 cups provolone cheese, shredded
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add about a tablespoon of salt.
- Add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside, drizzling with a little olive oil to prevent sticking.
- In a large skillet, heat olive oil over medium-high heat.
- Add the thinly sliced beef, season with salt and pepper, and cook for 3-4 minutes until browned but not fully cooked. Remove and set aside.
- In the same skillet, add onion, green bell pepper, and mushrooms (if using). Sauté for 5-7 minutes until softened.
- Add minced garlic and cook for an additional minute.
- Return the beef to the skillet, stir in Worcestershire sauce, and mix well.
- Pour in beef broth and bring to a simmer. Cook for 5 minutes.
- Reduce heat to low, stir in heavy cream, and simmer for another 2-3 minutes.
- Gradually add provolone and Parmesan cheese, stirring continuously until melted and smooth. Adjust seasoning if necessary.
- Add the cooked pasta to the skillet, tossing gently to coat with the sauce. If too thick, add a splash of beef broth or cream.
- Remove from heat once well combined and heated through.
- Serve hot, garnished with freshly chopped parsley and extra cheese if desired. Pairs well with a side salad or crusty bread.
