- 1 cup White Cran-Grape Juice, chilled
- 1 cup Unsweetened Coconut Milk Beverage (like So Delicious), chilled
- 1/2 cup Freeze-Dried Strawberries
- 1/4 cup Freeze-Dried Dragon Fruit (Pitaya)
- Ice cubes
- Optional: Fresh strawberries for garnish
- Optional: Whipped cream for topping
- Optional: A splash of lime juice for extra zing
Instructions
- Crush the freeze-dried strawberries and dragon fruit into a coarse powder using a resealable bag and a rolling pin or spoon.
- In a small bowl, combine the crushed fruit with 2 tablespoons of white cranberry-grape juice. Stir well to create a thick paste.
- Let the mixture sit for 5-10 minutes to rehydrate.
- Add the rehydrated fruit paste to the chilled coconut milk beverage. Whisk vigorously until fully incorporated and the coconut milk turns pink.
- Fill a glass with ice cubes.
- Pour the remaining white cranberry-grape juice over the ice.
- Slowly pour the pink coconut milk mixture over the cranberry-grape juice.
- Stir gently if desired for a uniform color.
- Add a splash of lime juice for extra zing.
- Sweeten to taste with agave nectar, honey, or simple syrup.
- Garnish with fresh strawberries.
- Top with whipped cream.
