  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 medium cucumber, sliced (optional for added freshness)
  • 1 lemon, sliced
  • 8 cups of filtered water
  • Ice cubes (for serving)

Instructions

  1. Thoroughly wash the plums, cucumber, and lemon under cold running water to remove any pesticides or dirt.
  2. Cut the plums in half, remove the pit, and slice each half into thin wedges.
  3. If using fresh thyme, rinse the leaves and strip them from the stems. If using dried thyme, measure out a teaspoon.
  4. Slice the cucumber into thin rounds and the lemon into thin slices.
  5. In a large pitcher, combine the sliced plums, thyme leaves, cucumber slices (if using), and lemon slices.
  6. Pour 8 cups of filtered water over the fruit and herbs, ensuring all ingredients are submerged.
  7. Cover the pitcher and refrigerate for at least 2 hours, or overnight for the best flavor.
  8. After infusion, remove the pitcher from the refrigerator. The water should have a lovely pink hue.
  9. Strain the infused water through a fine mesh sieve if you prefer a clearer drink.
  10. Fill glasses with ice cubes and pour the infused water over the ice.
  11. Garnish with a sprig of fresh thyme or a slice of plum or lemon for added visual appeal and flavor.
  12. Leftover infused water can be stored in the refrigerator for up to 3 days, but best consumed within 24 hours.
  13. You can refill the pitcher with more water after the initial batch, but the flavor will be less intense with each refill.
