  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground pork, breadcrumbs, chopped onion, and minced garlic. Use your hands to mix well.
  3. Add the egg, milk, Worcestershire sauce, dried thyme, salt, and black pepper. Mix until just combined, being careful not to overmix.
  4. Shape the mixture into a loaf and place it in a greased baking dish.
  5. In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Dijon mustard. Set aside.
  6. Place the shaped meatloaf in a greased baking dish or on a lined baking sheet.
  7. Brush half of the glaze over the top of the meatloaf.
  8. Bake in the preheated oven for about 45 minutes. Check the internal temperature; it should read 160°F (70°C).
  9. Remove the meatloaf from the oven and brush the remaining glaze over the top.
  10. Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (70°C).
  11. Once fully cooked, remove the meatloaf from the oven and let it rest for about 10 minutes.
  12. Slice into thick pieces and serve warm, drizzled with any remaining glaze. Pairs well with mashed potatoes, steamed vegetables, or a fresh salad.
