- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- ½ cup milk
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground pork, breadcrumbs, chopped onion, and minced garlic. Use your hands to mix well.
- Add the egg, milk, Worcestershire sauce, dried thyme, salt, and black pepper. Mix until just combined, being careful not to overmix.
- Shape the mixture into a loaf and place it in a greased baking dish.
- In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Dijon mustard. Set aside.
- Place the shaped meatloaf in a greased baking dish or on a lined baking sheet.
- Brush half of the glaze over the top of the meatloaf.
- Bake in the preheated oven for about 45 minutes. Check the internal temperature; it should read 160°F (70°C).
- Remove the meatloaf from the oven and brush the remaining glaze over the top.
- Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (70°C).
- Once fully cooked, remove the meatloaf from the oven and let it rest for about 10 minutes.
- Slice into thick pieces and serve warm, drizzled with any remaining glaze. Pairs well with mashed potatoes, steamed vegetables, or a fresh salad.
