- 4 ounces whipped feta cheese
- 1/2 cup pumpkin puree
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of cinnamon
- Pinch of nutmeg
Instructions
- Preheat oven to 400 degrees.
- In a large bowl, toss pumpkin with olive oil, salt, pepper, and garlic powder.
- Roast for 20-25 minutes, until tender and slightly caramelized.
- While pumpkin is roasting, prepare the whipped feta.
- In a food processor, combine feta, ricotta, honey, and lemon zest.
- Process until smooth and creamy, about 2-3 minutes.
- To serve, spread whipped feta on a platter or individual plates.
- Top with roasted pumpkin, toasted pumpkin seeds, a drizzle of honey, and fresh thyme.
